Ok, so these aren’t really macaroons… The truth is I was really craving some sweets and was too lazy to bake. So I searched my pantry for ingredients that could easily be thrown together to ease my sweet tooth. Cherries and chocolate are an awesome combination but I felt guilty leaving it at that. I continued to rummage through my kitchen until I found a sufficient amount of protein and fibre to help ease my conscience. In the end they definitely cured my sweet tooth and had a great combination of sweet, tart and crunch. These are super easy to whip up and highly addictive!
1 Tbsp. unsalted butter
1 cup of semi-sweet chocolate chips
¼ cup almonds
¼ cup walnuts
¼ cup pecans
2 ½ cups bran flake cereal
¾ cup dried cherries
In a food processor chop the almonds, walnuts and pecans until they are finely diced, set aside.
In a microwavable bowl, melt 1 Tbsp. of butter and add the chocolate chips. Microwave for about 30 seconds or until fully melted. Stir to combine.
Gradually stir the bran cereal into the chocolate, mixing thoroughly. Add the nut mixture and dried cherries until fully combined.
With a spoon create one inch balls and place them onto an un-greased cookie sheet.
Place the cookie sheet in the fridge and let set for about an hour.
Makes about 20 macaroons
