Pesto

What is worse than the Monday blues? The hung-over Monday blues after Super Bowl Sunday. The last thing I want to do is cook, but I feel I owe it to my body to refrain from consuming trans-fats at least until the Stanley Cup. With that in mind I decided pesto pasta was the way to go. Pesto is super easy because it doesn’t involve cooking! Pasta is also a sure fire way to beat a hangover that’s been lingering all day. The plus side is if you are a Packers fan you can celebrate their win by eating your team’s colours for dinner and if you are a Steelers fan you can pretend you are devouring your enemies. Pesto makes everyone happy!

2 cups fresh basil, stemmed
2 Tbsp. toasted pine nuts
1 Tsp. dried oregano
3 cloves of garlic, minced
Juice from ½ a lemon
3 Tbsp. extra virgin olive oil

In a small pan, toast pine nuts on medium high for about a minute or until they are golden brown.

Combine fresh basil, pine nuts, oregano, lemon juice and garlic in a food processor until well pureed.

Slowly add 1tbsp of olive oil at a time blending each round until all ingredients are combined and mixture is smooth.

You can serve pesto on a variety of dishes such as pasta, chicken, or pizza. It can also be refrigerated for up to one month in a sealed container.
