Roasted Garlic

With spring in the air and my mother arriving at the end of the week I have transformed into a cleaning and organizing warrior!! For the last week I’ve been working consecutively on two paintings which has turned my living room into the messy artist studio of my nightmares. Paint tubes and brushes are sprawled across the living room like land-mines for the unsuspecting. So excuse me for the lack of stories this week but duty calls.

1 garlic bulb
4-6 Tbsp. olive oil
tin foil

Preheat oven to 350

Cut the top off the garlic bulb. Place the garlic on a sheet of tin foil and fold it upwards so that it is loosely covered. Put it in an oven safe dish and pour olive oil into the tin foil boat onto the garlic.

Bake in the oven for 40 minutes. Remove from oven and let cool.

Squeeze the garlic bulb at the end so the cloves come out. Place cloves in a sealed container and pour the oil on top. Reserve oil for cooking. The roasted garlic can replace raw garlic in recipes or it can be spread onto crusty French bread.

wow, I’ve never roasted garlic with more than a drizzle of olive oil before, but I love the idea of using more; I bet it has a wonderful garlic flavor! yum, I should roast garlic tonight……
