Curry Roasted Pumpkin Seeds

I feel silly posting a recipe for roasted pumpkin seeds. I mean, it’s kind of like posting a recipe for hamburger helper. Everyone knows how to make these. It’s somewhat of a Halloween tradition to eat roasted pumpkin seeds after carving your pumpkin. The seasonings however are what makes them interesting.

This year while scouring my spice cupboard I came across my West Indian curry powder and I immediately knew I had to try it. Curry flavoured pumpkin is a classic and it translates just as well on the seeds.

pumpkin seeds
cooking spray
1 Tbsp. curry powder
1 Tsp. salt

Clean pumpkin seeds and spread on a cookie sheet overnight to dry.

Preheat oven to 350

Spray seeds with cooking spray and season with curry powder and salt.

Roast in the oven for 40 minutes, flipping after 20.

soooooooooo i did not know how to make roasted pumpkin seeds… but (once again!) thanks to munchin with munchkin I will tackle this endeavour for the first time. and just in time for halloween :)

This is such a simple but amazing idea. I never knew how much I liked curry until recently. (Growing up in the South my mother never used it.) I can’t wait to try this after I do pumpkins with my boys!
